Crepez Suzette

Ingredients:-
275 g flour, 3 eggs, a tablespoon of salt, 600 ml milk, 300 ml water, 1 tablespoon orange juice, 2 tablespoons of olive oil.

For the sauce:
juice of 2 oranges
2 tablespoons of sugar
3 tablespoons of concentrated orange juice (*Cointreau for alchoholic flavour)
juice of 1/2 lemon
butter for cooking



Method:

  1. Put the salt and flour in a bowl and stir in the milk, slowly stirring all the while.
  2. Add the eggs, water, orange juice and olive oil, beat well and leave to stand for 15 minutes.
  3. Melt a little butter in a frying pan. When it is very hot, add some of the pancake batter and turn the pan from side to side so that the batter spreads very thinly and evenly over the pan.
  4. When the bottom is done, turn the pancake and brown on the other side. Fold the pancake in four and place it in a warm, fairly until all the batter has been used. (you  should have about 24 pancakes.)
  5. Make the sauce by boiling the orange and lemon juices together with sugar.until the sugar has dissolved. Then, add the concentrated orange juice/Cointreau.
  6. Pour this sauce over the pancakes, light with a match and carry flaming to the table. ( I guess that for Cointreau)
